Ford Field's Top Chefs Departing to Start Chocolate Bonbon Company

With two home games to go in the season, Ford Field Executive Chef Joe Nader and his executive sous/pastry chef Scott Breazeale are leaving the building to start an upscale chocolate bonbon company.

The duo, along with third business partner Jennifer Gratz, is now in the midst of launching their brand of bonbons under the moniker Guilt Chocolates, reports Mark Kurlyandchik of the Detroit Free Press.

"The stuff that we've been tracking and falling in love with, we're not really seeing anybody doing it on the level that we'd like to see available in this market," Nader, 47, tells the Freep. "They're going to be more traditional style, higher-end bonbons. We'll be doing the high-gloss look that's been going on and I don't think anyone is doing them in the Detroit area."

The company purchased a 3,000-square-foot building in Redford that'll be used as its main production facility, and they're actively searching for a retail space in Detroit.

There's already a high-profile company in town Alexandra Clark's Hamtramck-based Bon Bon Bon, which has a retail outlet on Fort Street and Griswold in downtown Detroit.  

"It'll have a different look, feel, flavor profile," Breazeale said when asked by the Freep how Guilt's products would compare to Bon Bon Bon's.
